CRANBERRY CREAM CHEESE CHICKEN ROLLUPS

SERVES 5

INGREDIENTS:

2 LBS CHICKEN BREASTS

1 LB CREAM CHEESE

½ CUP CRANBERRY SAUCE

¼ HEAD ROMAINE LETTUCE

¼ BUNCH BABY SPINACH

8 SLICES SWISS CHEESE

1 MEDIUM TOMATO SLICED

5 WHOLE WHEAT TORTILLAS


DIRECTIONS:

1. PREHEAT OVEN TO 350. SEASON CHICKEN BREASTS WITH SALT AND PEPPER. ROAST CHICKEN BREASTS UNTIL DONE, THEN SHRED CHICKEN BREASTS WHEN OUT OF THE OVEN (THEY ARE EASIER TO SHRED WHEN STILL WARM). SET ASIDE.

2. IN A SMALL BOWL MIX CREAM CHEESE WITH CRANBERRY SAUCE UNTIL UNIFORMLY COMBINED.

3. LAY OUT TORTILLAS AND SPREAD A THICK LAYER OF CREAM CHEESE ALL THE WAY TO THE EDGES. IN THE MIDDLE OF THE TORTILLA, LAYER 3 LETTUCE LEAVES DOWN THE MIDDLE OF THE TORTILLA.

4. NEXT LAYER MEAT AND 2 SLICES OF CHEESE ON TOP OF LETTUCE. TOP WITH SLICED TOMATOES, MAYBE 2 SLICES.

5. STARTING AT ONE END OF THE TORTILLA, ROLL UP TIGHTLY TOWARDS THE FILLING. CONTINUE ROLLING UNTIL THE FILLING IS TIGHTLY WRAPPED AND THE CREAM CHEESE HOLDS THE ROLL UP TOGETHER.

6. CONTINUE WITH THE REMAINING TORTILLAS UNTIL ALL HAVE BEEN ASSEMBLED. CHILL THE WRAPPED ROLL UPS IN THE REFRIGERATOR FOR AT LEAST 30 MINUTES OR OVER NIGHT BEFORE DISHING UP.



BAKED SWEET POTATOES AND APPLES

SERVES 6

INGREDIENTS:

1 LB SWEET POTATOES, DICED ½” CUBES

1 OZ TRANS FAT FREE MARGARINE

½ OZ CHOPPED GINGER

3 OZ BROWN SUGAR

PINCH CINNAMON

PINCH NUTMEG

PINCH SALT

DASH VANILLA EXTRACT

½ LB FROZEN GREEN APPLES THAWED

½ CUP WATER

½ CUP FROZEN CONCENTRATE ORANGE JUICE

1 TBSP CORNSTARCH

1/3 CUP WATER


DIRECTIONS:

1. PREHEAT OVEN TO 425.

2. BAKE DICED SWEET POTATOES AT 425 FOR 30 MINUTES.

3. WHILE SWEET POTATOES ARE BAKING, ADD MARGARINE, GINGER, BROWN SUGAR, CINNAMON, NUTMEG, SALT, AND VANILLA TO A LARGE STOCK POT.

4. ADD APPLES. SIMMER UNCOVERED OVER MEDIUM-HIGH HEAT FOR 3-5 MINUTES. STIR WELL UNTIL APPLES ARE COATED WITH SUGAR MIXTURE.

5. ADD WATER AND ORANGE JUICE CONCENTRATE. BRING TO A BOIL.

6. ADD CORNSTARCH AND WATER. STIR WELL. BRING TO A BOIL. ALLOW CORNSTARCH MIXTURE TO THICKEN AND ADHERE TO APPLES.

7. AFTER REMOVING SWEET POTATOES FROM OVEN, POUR APPLE MIXTURE OVER PAN AND SERVE.
