BLACK BEAN CHILI

INGREDIENTS:

1 TBSP VEGETABLE OIL

1 ONION DICED

2 CLOVES MINCED GARLIC

1 LB GROUND BEEF/TURKEY

3 LG CANS BLACK BEANS

1 LG CAN CRUSHED TOMATOES

1 ½ TSP CHILI POWDER

1 TBSP DRIED OREGANO

1 TBSP DRIED BASIL LEAVES

1 TBSP RED WINE VINEGAR

GRATED CHEESE (YOUR CHOICE)


DIRECTIONS:

  • HEAT THE OIL IN A LARGE HEAVY POT OVER MEDIUM HEAT; COOK ONIONS AND GARLIC UNTIL ONIONS ARE TRANSLUCENT.

  • ADD BEEF OR TURKEY AND COOK, STIRRING, UNTIL MEAT IS BROWN.

  • STIR IN BEANS (IN JUICE), TOMATOES, CHILI POWDER, OREGANO, BASIL, AND VINEGAR. REDUCE HEAT TO LOW. COVER AND SIMMER 60 MINUTES OR SO, UNTIL FLAVORS ARE WELL BLENDED. GARNISH WITH GRATED CHEESE OF YOUR CHOICE AND SOUR CREAM. SERVE WITH SWEET CORNBREAD.




SWEET CORNBREAD

SERVINGS: 12

INGREDIENTS:

1 CUP ALL PURPOSE FLOUR

1 CUP YELLOW CORNMEAL

2/3 CUP WHITE SUGAR

1 TSP SALT

1 EGG

1 CUP MILK

3 ½ TSP BAKING POWDER

1/3 CUP VEGETABLE OIL


DIRECTIONS:

  • PREHEAT OVEN TO 400 DEGREES. SPRAY OR LIGHTLY GREASE A 9 INCH ROUND CAKE PAN.

  • IN A LARGE BOWL COMBINE FLOUR, CORNMEAL, SUGAR, SALT, AND BAKING POWDER. STIR IN EGG, MILK, AND VEGETABLE OIL UNTIL WELL COMBINED. POUR BATTER INTO PAN.

  • BAKE IN PREHEATED OVEN FOR 20-25 MINUTES OR UNTIL A TOOTHPICK INSERTED INTO THE CENTER COMES OUT CLEAN.
